Several people asked for my scone recipe, so here it is. Its a tweaked version of Joy of Cooking's scone recipe. Feel free to share as many scones as you like with friends and neighbors.
Mix together:
1 1/2 cups flour
1/2 cup of oatmeal pulverized in a food processor
1/3 cup of sugar
1 tablespoon of baking powder
1/2 teaspoon of salt
Add:
1 1/4 cup of heavy cream
Mix together just till blended. The dough will be thick. Feel free to use your hands.
Stir in:
1/2 to 1 cup of chopped nuts
1 cup of chopped dried fruit, raisins, dried cranberries, apricots, whatever you like.
Divide the dough into two equal balls and flatten on a cookie sheet covered with parchment
sprinkled with a bit of flour to keep from sticking.
Flatten each circle to about 1/2" high and cut into 8 segments, like a pie. Space out a bit on the paper. Brush with the cream and sprinkle with a little sugar.
Bake at 425 for 17 minutes, or lightly browned. I like to flip mine over and toast the bottoms a bit. Cool on a baking rack. Enjoy!
