We met last night for our bi-monthly Home Group gathering, as usual, and as usual a lovely time was had by all! The McKnights hosted us, and filled us up with a divine brisket, and dessert created quite a buzz as well! Melba Wright shared a fun, easy and delicious recipe with us. I didn't get the actual name for it, so I'll call it "Melba's Easy-Breezy Ice Cream Cake".

Fill a baking dish with one layer of ice cream sandwiches; cut to fit if necessary. Spread one tub of whipped topping over that. Top with your choice of candy: Melba used Heath toffee, which was fabulous, but after much discussion we decided that Butterfinger bars, Hershey's chocolate curls, crushed Oreo cookies, M&Ms, cherries or even a 'stars & stripes' berry design would be great, too!

Cover and put it in the freezer to set. Then take it out shortly before serving to thaw a bit to make it easier to cut and serve.

And there you go. Simple, delicious, and just plain fun for a spring/summer treat. Thanks, Melba!
